Pumpkin Bread

October is almost over, and I’m pretty sad about it. What better way to send off this glorious month than with one last pumpkin inspired post.

Pumpkin Bread Recipe

1 cup of pumpkin puree

½ cup of applesauce (I used this instead of oil) **

2 eggs

Heaping  ½ tsp. of cinnamon, nutmeg and allspice- a ½ tsp. just wasn’t enough for me ;)

Mix these ingredients together in a bowl. Then add in:

1 ½ cups flour

½ tsp. salt

1 tsp. baking soda

1 cup sugar (I used a little less than a cup, the applesauce added some sweetness)

½ cup chopped pecans

Once all the ingredients are mixed, bake the bread at 350°F for 45-60 minutes or until inserted toothpick comes out clean. Let cool on a wire rack (in loaf pan) for 10-15 minutes. Then invert the loaf pan, carefully take out the bread, and let it sit on the wire rack until cool. Of course, you have to enjoy a warm slice out of the oven with butter; it’s only right.

** Applesauce– It’s super easy to make. Peel, core and chop apples (about 9 small/medium sized). Cook apples in a deep sauce pan with a ¼ cup of water and the juice from one lemon quarter. Let simmer on medium-low heat until the apples are soft. Once softened, mash the apples twice over with a potato masher (a fork will work as well). Add cinnamon and sugar to taste. Applesauce is a fabulous side dish, a great oil substitute for pumpkin bread and other baked goods, annnnnd you don’t have to throw out apples that start going bad.
