In need of a delicious and healthy dish that you can whip up on weeknights? This post is for you! I saw this portobello pizza recipe on Pinterest, and I knew I had to try it.
- 1 pack of portobello mushroom caps
- 4 vine tomatoes, chopped
- 2 cloves of garlic, minced
- 1 onion, chopped
- 1/2 cup of fresh basil chopped
- Salt and pepper
- Red pepper flakes
- Parmesan cheese
Sauté garlic and onion in olive oil (medium heat) until the onions are translucent. Mix in the chopped tomatoes and let simmer. You don’t want them to cook completely down to a sauce texture, but you want them to soften up. While the tomatoes are simmering add in your spices: salt, pepper, red pepper flakes and oregano. Let simmer for 10 minutes; this lets the flavors meld together. While simmering, lightly wash off any dirt from the outside of the mushrooms. Cut the stems off, and using a spoon gently scrape out the inside gills. Be careful not to tear the caps. Layer/stuff each cap with fresh basil, a heaping amount of the above tomato mixture and shredded Parmesan. Bake at 400°F for 10-12 minutes or until cheese is golden. I was really hungry, so mine got pulled a little early, lol!
This recipe is really versatile. You could add any of your favorite pizza toppings to the stuffing: pepperoni, sausage, hot pepper rings, green pepper, olives, etc. There are tons of possibilities!
