Quinoa Egg Salad

Well, I’m back for a quick post. I’m not even going to explain my lack of posting. It just wasn’t happening, clearly.

This recipe inspired me to get a post up, so you know it must be good. It’s adapted from a tumblr I love called Fit Personality.

Quinoa Egg Salad:

  • 1 cup red grapes, halved
  • 1 cup raw kale, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 cup cooked quinoa
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled feta cheese
  • 2 hard boiled eggs, sliced
  • Zest of 1 lemon
  • 1 Tblsp. EVOO
  • 1 Tblsp. apple cider vinegar
  • Salt and pepper to taste

Mix all these ingredients together in a bowl and enjoy!

For you health conscience readers out there, this recipe, according to My Fitness Pal, is 981 calories (most of the calories coming from the quinoa). It serves 2-3 people depending on how hungry you are. I had 1/3 of this recipe for dinner with roasted edamame, so it was only 327 calories of amazingness! Not to mention that the ingredients are healthy and packed with nutrients and protein. You’re welcome :)
